I haven%26#39;t been to any hotel in Mostar nor Sarajevo, so I don%26#39;t know.
In Mostar, I%26#39;d probably choose Motel %26quot;Kriva cuprija%26quot; (%26quot;Crooked Bridge%26quot;). Their restaurant is one of my favorites in Mostar.

In Sarajevo, I%26#39;d probably go to one of the two newly open hotels (if price is not an issue :)) :
Hotel Sarajevo

Hotel Europe

I think one night in Mostar is enough if you want to see only main tourist attractions, but I%26#39;d stay more and explore some more places.
As for Montenegro, Kosovo and Macedonia, I haven%26#39;t been there at all. I suggest you ask the same questions on the forums for each country, you%26#39;ll probably get the best answers that way.
Hope this helps a little.
Have a safe trip and welcome to B%26amp;H. :)
